What role does a food testing lab play in ensuring food safety?

Food is the source of energy. Food gives us essential nutrients and helps us to survive. Nowadays, foods are being adulterated with harmful chemicals. They come from surroundings and may cause serious health issues. A food can be contaminated at any stage of processing. To meet the food safety challenges, food testing is necessary. There are various methods of food testing and analysis. These tests identify contaminants and adulterants in foods. Food testing lab helps to test raw materials to processed foods and ensures that your food is safe for human consumption. These days, Food Business Operators are stressing on food safety. They have understood the importance of food testing lab.

Importance of Food Testing Lab: Food testing lab follows food safety guidelines. Lab uses various scientific techniques to analyse ingredients and identify contaminants.Food testing results help to improve shelf-life of products. We have discussed the various methods below. Take a look.

1.    Chemical analysis: The purpose of chemical testing is to meet chemical parameters specified by the food safety authority. Chemical analysis is used to monitor raw materials and finished products. Foods are analysedto check nutrients and chemical contaminants present in foods. The common contaminants are heavy metals, antibiotics, pesticides and preservatives. As per the test results, nutritional labelling is done.

2.    Microbiological Testing: The purpose of microbiological testing is to meet microbiological parameters specified by the food safety authority.  Microbiological testing identifies microbial hazards in foods. Bacteria, yeasts, moulds and toxins produced by them make foods unsuitable for human consumption. Bacterial endotoxin test, total bacterial test, microbial limit test, sterility testing, total fungal counts are used to detect these pathogens in foods.

3.    Physical Testing: This testing is conducted to check the presence of physical hazards in foods like metals, glass, stone, plastic. They may come from the environment.

4.    Sensory Evaluation: Sensory evaluation includes organoleptic analysis. Here the quality of food products is assessed with the help of human senses (taste, touch, smell, sight and hearing). As for examples, the tongue can taste the food and determine the quality. The noose can detect rancidity in food materials.

FSSAI and Its Role:Food Safety Standards Authority of India is the autonomous body working under the aegis of Ministry of Health & Family Welfare, Govt. of India. FSSAI issues regulations to implement the Food Safety & Standards Act, 2006. Besides issuing of the Food Safety and Standards Regulations, FSSAI also notifies the Food Testing Laboratories across India to carry out the food testing based on the guidelines of different methods of analysis. All food business operators have to approach these NABL Accredited/FSSAI Notified food laboratories for the testing of their products.

Arbro Lab is a NABL Accredited/ FSSAI notified lab based in Delhi.
